2026 William Ortiz; La Cabaña, Chiroso - Colombia
Chiroso was, for many years, found only in Urrao—much farther north than Huila—but some southern producers have recently begun cultivating this unique variety. This is the second separation from William Ortiz and an exemplary expression of that effort. In the cup we find a stone fruit–forward profile of peach, lemon zest, and wildflower honey.
